Billy Goat Chip Company

St. Louis potato chips that started as a restaurant side dish.

Founded by
Brian Roth, Rob Lyons
Based in
St. Louis, Missouri

Their story

Billy Goat chips started out as a side at the Billy Goat Restaurant and Bar in St. Louis, where they outsold everything else on the menu. Regulars kept asking for bags to take to the park, to tailgates and to holiday gatherings.

Co-owners Brian Roth and Rob Lyons took the hint. In December 2008 they closed the restaurant and turned their attention to the chips full time, setting up production in the city's Princeton Heights neighborhood.

How it's made

Potatoes are sliced, rinsed in water so the slices do not stick, then drained and fried in small batches while a cook stirs and watches each load. The finished chips get a dusting of the company's own seasoning blend.

The chip sells itself,
Theresa Rein, former Billy Goat Restaurant server, to Suburban Journals (2010)

Why we carry them

We like a chip with a real story behind it, and this one earned its following one plate at a time. Thick, crunchy and well seasoned.
