Boichik Bagels
New York-style bagels, rebuilt from memory in the Bay Area.
- Founded by
- Emily Winston

- Berkeley, California
Their story
Emily Winston grew up in New Jersey, where bagels from H&H in Manhattan were a regular treat. When she moved to the Bay Area she could not find anything like them, so in 2010 she started trying to make her own, approaching the problem with an engineer's patience.
The experiment became a pop-up in 2017, and in late 2019 she opened the first Boichik storefront near Rockridge in the East Bay, where lines formed down the street. In 2023 she opened a large production facility in Berkeley, and Boichik now has shops across the Bay Area, including San Francisco.
How it's made
All of Boichik's dough is mixed at its Berkeley factory. Some shops get dough daily and boil and bake on site, while others receive bagels already baked, with thousands leaving the facility each day.

Why we carry them
We are happy to have a true local bagel to share. Boichik's chewy crust and dense crumb are what many New York transplants have been missing.
