Their story

3 Fonteinen grew out of a family cafe in Beersel, just south of Brussels. Gaston Debelder and Raymonde Dedoncker moved there in 1953 and began blending lambic, and the cafe De 3 Fonteinen became the family restaurant.

Their son Armand took over the blending in the 1980s and became one of the central figures in the lambic revival. In 2009 a faulty thermostat caused thousands of bottles of geuze to explode and ruined many more; Armand distilled what was left, and support from fellow lambic families helped the brewery survive. Armand died in 2022.

Today Michael Blancquaert and Werner Van Obberghen lead the brewery, which moved its barrels, bottling, and a tasting room to a larger site in neighboring Lot in 2015.

How it's made

Lambic is spontaneously fermented and aged for years in oak barrels and large foeders, then blended into geuze or macerated with fruit. The brewery works with local farmers in a cereal collective to grow older barley and wheat varieties for its lambic.

Why we carry them

If you want to understand geuze, start here. We think a bottle of 3 Fonteinen is one of the best ways to taste what patient blending can do.
