Their story
Camillo Donati farms the hills of Sant'Andrea di Barbiano, near Felino, about 20 kilometers from Parma. His grandfather Orlando founded the estate in 1930, and Camillo is the third generation to work it.
After his father died in 1992, Camillo took over a small parcel of vines and began building the estate he has today, releasing his first labels in 1997. He is now regarded as one of the early voices of natural wine in Emilia-Romagna, making dry, fizzy wines from grapes that most neighbors bottle still.
How it's made
The roughly 11 hectares of vines, including Lambrusco, Malvasia di Candia, Barbera and Bonarda, are farmed organically and biodynamically, with the work done by hand. Fermentations start with native yeasts, and the wines finish fermenting in the bottle by the ancestral method. They are left on their lees, unfined and unfiltered.
Why we carry them
We love these with salumi and Parmigiano, the foods they grew up next to. They are cloudy, dry and lively, a good way into natural sparkling wine.
