Their story

Capay Mills is a small grain mill on 15 acres in Esparto, in Yolo County, about 110 miles from San Francisco. Miller and grain farmer David Kaisel runs it with a couple of part-time helpers.

The mill's goal is to bring back historical wheats and specialty grains that fell out of use as commercial flour took over. Bakers and home cooks around the Bay Area know it from farmers markets, including the Ferry Plaza.

How it's made

Capay Mills grows some of its own grain and buys from independent family farms in Yolo, Sutter and Sacramento counties. Heritage and varietal wheats, rye, buckwheat and corn are stone-milled into whole flours, polenta, grits and cornmeal.

Why we carry them

We love having truly local flour on the shelf. Bake with Sonora wheat once and you will taste the difference.
