Their story

Castello traces back to Rasmus Tholstrup, a Danish cheese merchant who started the business in 1893. His son Henrik later bought a dairy in Sweden and grew the brand well beyond Denmark.

Castello is now part of Arla Foods, the Danish-Swedish dairy cooperative owned by its farmers, which brought the cheeses to North America.

How it's made

Castello makes a wide range of styles in Denmark, from soft-ripened and cream cheeses to semi-hard Havarti and blue cheeses. Milk comes through the Arla cooperative of dairy farmers.

Why we carry them

Castello's creamy blue is a gentle introduction for anyone nervous about blue cheese. We like it with pears, honey and a crisp cracker.
