Their story

Chimay is brewed at Notre-Dame de Scourmont Abbey in southern Belgium, a few miles from the French border. The abbey was founded in 1850 by 17 Trappist monks from Westvleteren, invited by the Prince of Chimay to help a poor farming region.

The monks built their brewery in 1862 using bricks from a closed agricultural school. About 30 brothers live at the abbey today, following the Rule of Saint Benedict and overseeing both the beer and the abbey's cheese.

As an Authentic Trappist Product, Chimay's surplus income goes to charity.

How it's made

Brewing happens under the monks' close supervision. The range includes the Red, the first beer brewed at the abbey, the Blue, first made as a Christmas beer, the Triple, the lighter Dorée and the strong Chimay 150, created for the brewery's 150th anniversary.

Why we carry them

We think every beer lover should know Chimay Blue. It is a benchmark Belgian ale and pairs beautifully with cheese.
