Their story
Le Clos du Caillou is a family estate in Châteauneuf-du-Pape, bought by the Pouzin family in 1956. Claude Pouzin ran it until 1995, when his daughter Sylvie and her husband, Jean-Denis Vacheron, took over.
After Jean-Denis died in an accident in 2002, Sylvie carried on running the estate. Until 1993 most of the harvest was sold to merchants; since then the family has bottled its own wines.
Les Safres is named for the sandstone soils it comes from, and is made mostly from Grenache.
How it's made
The 16 hectares of Châteauneuf-du-Pape vines are farmed with biodynamic methods and have been certified organic since 2010. Les Safres is mostly Grenache with some Syrah, Mourvèdre and other varieties, and the estate's Châteauneuf-du-Pape is aged in large foudres for about 14 months.
Why we carry them
We like Les Safres as a generous, approachable Châteauneuf-du-Pape from a family estate. It is a fine bottle for a holiday roast.
