Their story
COS is named for the initials of its three founders, Giambattista Cilia, Giusto Occhipinti and Pinuccia Strano, school friends from Vittoria in Sicily's southeast corner. In 1980 they started making wine from grapes grown in their parents' vineyards.
The winery became one of the best-known natural producers in Italy, championing the local Frappato and Nero d'Avola grapes. Those two varieties come together in Cerasuolo di Vittoria, Sicily's only DOCG.
How it's made
COS handles its grapes with a light touch in the cellar. The varietal Frappato is fermented in stainless steel to keep it fresh, while other wines, such as the Pithos range, are fermented in 400-liter clay amphorae buried in the ground.
Why we carry them
We love this Frappato lightly chilled. It is bright and easygoing, and a good introduction to Sicilian red.
