Crisp & Co

Small-batch pickles made from local vegetables in the Mid-Atlantic.

Based in
Eastern Pennsylvania

Their story

Crisp & Co is a small pickle company run by Tom Peter, who started out brining vegetables in a workshop in Hockessin, Delaware, just over the line from southeastern Pennsylvania. The brand grew up in the Philadelphia food scene and has been carried by local shops such as Di Bruno Bros.

Peter made a point of paying more for good local produce than most pickle makers do, building his line around flavor rather than cost.

How it's made

Vegetables are brined in small batches using local produce. For the mushroom pickles, Kennett Square cremini mushrooms are seasoned with thyme, garlic and olive oil before being pickled and jarred.

I like to mince the mushrooms and fold them into goat cheese to spread on a baguette

Why we carry them

We like Crisp & Co for pickles that taste like the produce they started as. The mushroom pickles are a great surprise on a cheese board.
