Their story
Crooked Stave was founded in Denver in late 2010 by Chad Yakobson, a brewer who wrote his master's thesis on Brettanomyces, the wild yeast behind many funky and sour beers. He shared that research openly online as The Brettanomyces Project.
The brewery's name comes from the wooden staves that form a barrel, and wood sits at the center of everything it makes. Crooked Stave has become one of the best-known American producers of wild and sour ales.
How it's made
Most Crooked Stave beers are fermented with Brettanomyces, often as the only yeast, and matured in oak barrels. The team blends finished beers from different barrels to build each release, mixing lab science with a brewer's palate.
