Their story

Destilería y Bodega Abasolo sits in Jilotepec de Abasolo, about an hour and a half outside Mexico City, at an altitude that ranks it among the highest whisky distilleries in the world. It was built as the first distillery devoted entirely to Mexican whisky.

The project comes from the team behind Montelobos mezcal and Ancho Reyes chile liqueur, who wanted to build a spirit around Mexico's most fundamental crop. Abasolo whisky launched in the United States in 2020, alongside a corn liqueur.

How it's made

Abasolo uses non-GMO cacahuazintle corn that is nixtamalized, an ancient Mexican process of cooking and soaking the corn in an alkaline lime solution before washing and hulling. The mash is double distilled in copper pot stills and aged about two years in used American oak barrels, in former horse stables turned into open-air warehouses.

Why we carry them

Abasolo tastes like nothing else on our whiskey shelf, with a warm, toasted corn note that recalls a fresh tortilla. We think it is a great pick for the whiskey fan who has tried everything.
