Their story
Brothers Romain and Damien Bouchard are the fourth generation of their family to farm in Chablis, with vineyards around the villages of Chablis, La Chapelle Vaupelteigne, Beines, Fontenay and Villy.
For decades the family sold its Chardonnay, including grand cru and premier cru fruit, to other producers. In 2016 the brothers started Domaine de l'Enclos to bottle the wine themselves.
They describe their approach as simple and natural, built on observation and patience.
How it's made
Grapes are hand-picked from vines 15 to 50 years old, on chalky Kimmeridgian slopes and flatter Portlandian clay. Fermentation uses native yeasts in temperature-controlled stainless steel, and the wine rests on fine lees for about nine months before a light filtration. The estate is certified organic.
Why we carry them
Their village Chablis is a clear, stony Chardonnay that shows what this region does best, with no oak in the way.
