Their story
El Maestro Sierra is a small sherry house on a high point in the center of Jerez de la Frontera, where breezes from the coast help the flor yeast thrive. It has been run for about three decades by Doña Pilar Pla Pechovierto, whose late husband descended from the founding Sierra family. She kept the bodega going as he had wished.
The house dates to 1832, when José Antonio Sierra, a master carpenter and cooper who built barrels for the big sherry houses, began building a winery of his own. For much of its history it sold wine to other houses, and bottling under its own label is relatively recent.
How it's made
The bodega's soleras are 60 to 100 years old, and its dry wines are aged under flor. The Pedro Ximenez is a sweet, dark sherry made from the grape of the same name and aged in the house's solera system.
Why we carry them
We like El Maestro Sierra's PX poured over vanilla ice cream or sipped with blue cheese. The half bottle is a nice way to try a traditional family bodega.
