Their story
Eric's Nopales is run by Jillian Ruiz and her husband, Eric, who gave the company its name. The couple started the business in 2020, moved to California's Central Valley in 2021 and began distributing that same year. Jillian lives in Ripon and you can often find her selling jars at the local farmers market.
Their goal is simple: to introduce more people to nopales, the tender cactus paddles that are a staple of Mexican cooking, and show how easy they are to enjoy.
How it's made
The nopales are pickled using the couple's own recipes and jarred by a co-packer. Flavors include Taco Truck, Chili Ginger, Tuscan Herb, Garlic Dill and Heat Wave. The jars are shelf stable and should be refrigerated once opened.
Why we carry them
We love these on tacos, in salads or straight from the jar. If you've never tried nopales, the snappy, green-bean-like texture is a pleasant surprise.
