Their story

Hop Butcher for the World was started in Chicago by Jeremiah Zimmer and Jude La Rose. The two began brewing under the name South Loop Brewing Company, then changed it in 2016 to avoid confusion with another local beer.

The new name comes from Carl Sandburg's poem "Chicago," which calls the city "Hog Butcher for the World." For years they brewed at partner breweries in the Chicago area while building a following for their hazy IPAs, with plans to open a brewery of their own.

How it's made

Most of what Hop Butcher brews is hazy double IPA, often built around newer hop varieties like Galaxy, Vic Secret, and Sabro. The team keeps recipes fairly simple and adjusts grain, yeast, and fermentation so the beers stay juicy without turning sweet or losing their bitterness.

you can remain on the simple side of things without over-complicating a recipe, and you get a better beer.
