Their story
Humboldt Cider Co. was started in Eureka by Darren and Michelle Cartledge, who also run the Local Beer Bar in Old Town, and Jamie Ashdon, whom they met through his homebrew supply shop. The three shared a love of fermenting and saw an opening for cider on the North Coast.
A community Kickstarter in 2014 raised more than $37,000 and paid for the county's first hard cider production space, set in a remodeled milking barn at the Redwood Acres Fairgrounds. The tasting room opened in early 2015.
How it's made
Most of the apples come from a family farm in Boonville, with more from a Eureka orchard and backyard trees picked with friends. The fruit is washed, ground, and pressed, then the juice ferments for a few weeks before moving to maturation tanks. Each batch takes at least two months from fruit to finished cider.
Why we carry them
We like supporting small cideries like this one that press real Northern California apples. Try it alongside a sharp cheddar.
