Their story
Humboldt Distillery is a husband-and-wife business in Fortuna, a small town in California's Humboldt County. Abe Stevens is the founder and head distiller, and his wife Courtney is co-founder and runs marketing and the people side of the business.
They opened in 2013 with a simple goal of making good spirits without pretense. The lineup has grown to include organic vodka, gold and spiced rums, an organic malt whiskey, and a hemp-infused vodka.
How it's made
The vodka and rums are made from organic sugarcane, and the whiskey from organic malted barley, using water from local redwood watersheds. The team works with one column still and three pot stills, ages its rum and whiskey in American white oak, and bottles by hand.
We've only ever set out to simply make high-quality products that people can enjoy without a lot of pretentiousness
