Their story
Industry City Distillery sits in a converted warehouse in Sunset Park, Brooklyn. It grew out of The City Foundry, a research and design group started by Cooper Union graduate Dave Kyrejko in 2010; distilling became the way to pay for the shop. Fellow Cooper alum Rich Watts was part of the founding team.
The group designed and built much of its own equipment in an on-site machine shop, aiming to make as much spirit as possible in a small footprint with little energy. Rather than patent their ideas, they shared them under Creative Commons.
How it's made
The vodka starts with beet sugar, fermented by yeast held in small alginate beads inside glass bioreactors. The wash runs through a custom stripping still and then a fractional still that takes many fine cuts, so the spirit is blended to flavor rather than charcoal filtered.
The entire goal of the distillery was to make the most product in the smallest square footage
Why we carry them
We like a vodka with a point of view, and this one has plenty. Try it in a martini to taste how clean and soft beet sugar vodka can be.
