Their story

Ben Jacobsen started Jacobsen Salt Co. in 2011 with a simple goal: make great salt in the Pacific Northwest. Before settling on a spot, he tested seawater from 27 sites along the Oregon and Washington coasts.

He chose Netarts Bay, just south of Tillamook, where clean, salty water is helped along by the oysters that filter the bay. The salt is harvested on the coast, then packed in Portland.

What began as one flake salt has grown into a full pantry line, with infused salts, seasonings, honey, caramels and licorice, all built around that Oregon sea salt.

How it's made

Seawater from Netarts Bay is filtered and concentrated, then boiled to remove excess minerals. The brine is slowly evaporated in custom pans, and the flakes that form are scooped out by hand, rinsed and dried. The salt is sorted by size into flake and kosher grades and sent to Portland for packing.

Why we carry them

We reach for Jacobsen flake salt to finish everything from steak to chocolate chip cookies. It has a clean, briny taste and a crunch that holds up on the plate.
