Their story
Kemushi makes a short line of sauces for home sushi cooks: a spicy mayo, a sushi vinegar, an umami soy sauce and an unagi sauce. The brand is sold through Brooklyn Made, a shop run by the Brooklyn Chamber of Commerce that features Brooklyn-based makers.
The lineup covers the condiments you would find at a sushi counter, scaled for a home kitchen.
How it's made
The sauces are made in small batches. The sushi vinegar is brewed for more than 24 hours with sea salt, beet sugar and konbu, and the soy sauce is aged a day with konbu, bonito and palm sugar. The unagi sauce uses gluten-free tamari and muscovado sugar.
Why we carry them
We like Kemushi for anyone rolling sushi at home who wants the sauces to match the effort. The unagi sauce is good on grilled fish and rice bowls too.
