Their story
This sake comes from Kodama Brewing in Katagami, a rice-growing town in Akita Prefecture in northern Japan, near Mt. Taiheizan. The Kodama family started out in 1879 making soy sauce and miso, and began brewing sake in 1913.
Today the brewery is led by Shin-ichiro Kodama, the fifth generation, who took over from his father in 1997. The family describes its guiding idea as tradition and innovation, and its main labels are Taiheizan and Tenko.
How it's made
Kodama brews with local rice and clean spring water from the nearby mountains. The brewery uses its own take on the traditional kimoto starter method, which adds depth and acidity, and Akita's cold winters allow a long, slow fermentation.
Why we carry them
We like Kodama's sakes for their balance of richness and clean acidity, an easy match for everything from sashimi to roast chicken.
