Their story

La Catedral de Navarra is the label of Conservas La Catedral, a family cannery in Mendavia, in Navarra in northern Spain. It was started more than 80 years ago by the grandparents of current owner Cayo Martinez, then passed to his mother before he took over about two decades ago.

The company is best known for its white Navarra asparagus, along with piquillo peppers and artichokes.

How it's made

Vegetables are processed right after they come in from the fields, which the family credits for their fresh flavor. The asparagus is packed whole in jars, sold by the number of spears, and the family describes the work as slow and laborious.

Why we carry them

We like La Catedral's thick white asparagus served simply, chilled with olive oil or a little mayonnaise, the way it is enjoyed in Navarra.
