Their story

Les Moulins Mahjoub is run by the Mahjoub family in Tebourba, a fertile farming valley west of Tunis in northern Tunisia. Majid and Onsa Mahjoub lead the business today, carrying on a family connection to the land that stretches back more than a century.

The family grows certified organic olives along with peppers, tomatoes, lemons and grains, and turns that harvest into olive oil and a long list of traditional North African foods. Their range covers everything from hand-rolled couscous to harissa, preserved lemons and chutneys, the kind of things a Tunisian kitchen keeps on hand.

How it's made

Olives and vegetables come from the family's organic farm and are harvested carefully in small batches. Their M'hamsa couscous is rolled by hand from semolina, water, olive oil and salt, then sun-dried. Harissa starts with sun-dried hot and sweet peppers ground with tomato, olive oil and spices.

Why we carry them

We reach for Mahjoub when we want North African cooking to taste like it does at the source. The harissa and hand-rolled couscous are a great place to start.
