Their story
Manly Spirits is the project of David Whittaker, a chemical engineer, and Vanessa Wilton, a designer. The idea for a craft distillery came up on a drive through Tasmania in late 2015, and the pair went all in, opening their distillery on Sydney's northern beaches in April 2017.
The coastline shapes everything they make. They worked with forager and chef Elijah Holland to gather seaweeds and native coastal plants for their gins, and the range has grown to include vodka, limoncello and malt spirits.
How it's made
The gins start with a neutral spirit distilled from Australian wheat in New South Wales. Classic gin botanicals are paired with native and marine ones, including foraged seaweeds, and the limoncello uses native lemon myrtle and lemon aspen. Everything is distilled and blended at the Manly distillery.
