Their story

Sarah and Dirk Marshall are lifelong Oregonians who started making hot sauce in their Portland home kitchen in 2011, twelve jars at a time. Sarah develops the recipes; Dirk chops, labels and ships.

By 2012 they had moved into a commercial kitchen and scaled up to 200-jar batches, but they kept the same hands-on routine. You can still find them at the Portland State farmers market on Saturdays in season. Sarah has also written a book on home preserving, and the couple teaches canning classes.

How it's made

Sauces are made in small batches from peppers and vegetables, vinegar and spices, sometimes with sugar or local honey, and no binders or additives. Produce comes from farms in northwest Oregon and southwest Washington, and each bottle is filled and stamped by hand.

We make hot sauce in tiny batches to ensure the quality of every single jar.

Why we carry them

We like hot sauce that tastes like the vegetables it's made from, and Marshall's does that. Heat with real flavor behind it.
