Their story

Amarás, which means "you will love" in Spanish, is made by five master mezcaleros in San Juan del Río, a mezcal town in the hills of Oaxaca. Founder Santiago Suarez built the brand around their craft and the local agave they grow.

The brand plants five new agaves for every one it harvests, and in 2014 its team planted more than 28,000 espadín and cupreata plants. Amarás first reached the United States through San Francisco's Anchor Distilling Company.

How it's made

Espadín agave from the surrounding hills is roasted for five days in conical stone ovens fired with holm oak, then crushed by a horse-drawn stone mill. The juice ferments in open pine vats for up to 13 days and is distilled twice in copper pot stills. Each bottle is signed and numbered by hand at the palenque.

Why we carry them

The espadín is a smooth, balanced introduction to mezcal, and we like that the brand puts real effort into replanting agave. It works well in a mezcal Negroni.
