Their story
Off Color Brewing opened in Chicago's Logan Square neighborhood in 2013. Its founders, John Laffler and Dave Bleitner, came from two of the region's well-known breweries, Goose Island and Two Brothers.
From the start they set out to brew styles that had mostly fallen out of fashion, especially German beers from before the Reinheitsgebot purity law. Its best-known beer is Apex Predator, a year-round farmhouse ale.
How it's made
Off Color brews in Chicago with a focus on historical and unusual styles. Apex Predator, its year-round farmhouse ale at 6.5% ABV, is fermented with a free-rise approach that lets the yeast warm up and build character.
Why we carry them
We like Off Color for beers that are different without being gimmicky. Apex Predator is a great pick for anyone who likes saisons.
