Their story
Olympia Provisions is led by chef Elias Cairo, a first-generation Greek-American who apprenticed in Switzerland as a young man and later ran the kitchen at Portland's Castagna. In 2009 he opened the business with Michelle Cairo, Tyler Gaston, Nate Tilden and Martin Schwartz.
It started as Oregon's first USDA-approved salumeria, a 900-square-foot curing room attached to a restaurant in Portland's old Olympic Cereal Mill building. The team sold salami at farmers markets and at the restaurant, and demand kept pushing them into bigger spaces.
Originally called Olympic Provisions, the company took its current name in 2014 after the International Olympic Committee objected.
How it's made
Olympia Provisions makes salami, sausages, hams, bacon and other cured meats using European techniques Cairo learned during his training. Production moved to a 34,000-square-foot facility in Southeast Portland in 2014.
Why we carry them
We think Olympia Provisions makes some of the best American salami around, and it is an easy anchor for any charcuterie board. Try a couple of styles side by side.
