Their story

Otto's Naturals is a family business in Clinton, New Jersey, run by Sadie and John Olsen. It began in 2013, when Sadie was dealing with food intolerances during her pregnancy with their son, Otto, and the couple went looking for a grain-free flour that actually baked well.

Their search led them to a refined cassava flour made in Brazil. They built the company around it, with the goal of gluten-free baking that does not taste like a compromise, and have since added baking mixes to the flour.

How it's made

Otto's flour is made from just cassava root and water. Unlike tapioca starch, it keeps the root's natural fiber, so it works as an all-purpose flour substitute rather than only as a thickener.

My purpose was to find a grain-free alternative that tasted so good, no one would even know the difference.
Sadie Olsen, founder and CEO, to Snack Food & Wholesale Bakery (2022)

Why we carry them

We point gluten-free bakers to Otto's when they want cookies and tortillas that taste like the usual kind. It is a simple, one-ingredient flour.
