Their story
Persephone Bakery is run by Ali and Kevin Cohane in Jackson Hole, Wyoming. They started in 2011 by selling baguettes to their neighbors in the valley.
That small start grew into three cafes across Jackson Hole, inspired by French bakeries but with menus rooted in Wyoming. Alongside breads and pastries, the bakery makes sweets and treats that travel beyond the valley.
How it's made
The bread is leavened with a natural culture of wild yeast from the region, then slowly fermented and shaped by hand. Loaves bake on the stone hearth of a German deck oven with steam. As a scratch bakery, they make everything from basic ingredients, favoring seasonal and local ones.
Why we carry them
We like bringing a bit of a beloved mountain-town bakery to San Francisco. Their treats make an easy, thoughtful gift.
