Postumo
Small-batch Jalisco tequila made with native yeasts and alembic stills.

- El Arenal, Jalisco
Their story
Postumo is the project of Jaime Ortega, a longtime tequila industry hand, and master distiller Alfredo Pelayo Brambila, who has more than 25 years at the still. Together they wanted to make a small-batch tequila that pushed back against the industrial methods common in the category.
The name honors Jaime's grandmother as well as the blue Weber agave itself. The agave comes from family-owned fields in the volcanic lowlands of Jalisco.
How it's made
For the blanco, agave from El Arenal in the Valles region is cooked in brick ovens, crushed with a roller mill, fermented with native yeasts and double distilled in alembic stills. The reposado uses agave from the Sierra de Amula region and rests four months in American oak.
Why we carry them
We like Postumo as a well-made, traditional tequila at a sensible scale. The blanco is a good one to sip neat to taste the agave.
