Their story
Regalis is the company of Ian Purkayastha, who grew up in Fayetteville, Arkansas, foraging wild mushrooms as a teenager and selling them to local chefs. While still in high school he was already selling truffles for an Italian importer.
He founded Regalis Foods in New York City in 2011 at age 19, supplying fresh truffles to restaurant kitchens. The business grew into a source for caviar, uni, wild seafood and other hard-to-find ingredients, with offices later opening in Chicago and Dallas.
Purkayastha told his story in the 2017 memoir Truffle Boy: My Unexpected Journey Through the Exotic Food Underground.
How it's made
Regalis started by supplying fresh truffles to restaurant kitchens and expanded into caviar, uni, wild seafood and edible flowers. Its retail line, including truffle butters, salts and oils, brings those ingredients into home pantries.
Why we carry them
Regalis is a shortcut to restaurant-level flavor at home. A spoon of their truffle butter on pasta or eggs goes a long way.
