Their story
Seven Stills began with two friends from UC Santa Cruz, Tim Obert and Clint Potter, brewing and distilling for fun at Clint's parents' house in Novato. When their homemade whiskeys filled a bookshelf, about 50 of them, they decided to turn the hobby into a business.
Founded in 2016, Seven Stills built a brewhouse in Bayview and opened taprooms around San Francisco, including Mission Bay and the Outer Sunset. The pandemic, liquor license troubles and slow sales hit hard, and after 2020 the company closed its taprooms and stopped production, with remaining stock sold online.
How it's made
The idea was to brew craft beer first and then distill it, so each whiskey carried the character of the beer it started as. The work began in a garage and grew into a full brewery and distillery operation in San Francisco.

Seven Stills partnered with the Tioga Sequoia Craft Brewery to brew an imperial oat stout. The Finished beer was then distilled, producing this bold, rich, and complex whiskey.
