Chef-collaboration beef jerky with flavors drawn from places and dishes.

Their story
Side Project Jerky is Marcos Espinoza's hobby turned business. Based in Pennsylvania, it grew quickly once his unusual flavors caught people's attention.
The idea is to make jerky that tastes like a place. Its first collaboration was with chef Sean Magee, who wanted to capture a bowl of pho in a strip of jerky, and the brand has kept working with chefs in test kitchens since.
How it's made
Flavors are developed with chefs and built around specific dishes and spice blends, such as Ethiopian berbere and Mongolian beef. The jerky is made without MSG or sodium nitrite.
Why we carry them
We like Side Project for jerky that tastes like a real dish, not just salt and smoke. The Berbere is a good one to try first.
