Their story
Sonoma County Distilling Co. is the original name of what is now Sonoma Distilling Company. It was founded in 2010 by Adam Spiegel, a San Francisco native who got hooked on distilling while helping a friend at a Santa Rosa distillery in 2008.
The distillery sits in Rohnert Park, in the heart of Sonoma County, and makes its whiskey start to finish under one roof.
How it's made
The team mills, mashes and ferments non-GMO grains in house, then distills in handmade copper alembic pot stills and ages the spirit in American oak. The lineup includes a rye, a wheated bourbon, and Cherrywood Smoked Bourbon made with malted barley smoked over local cherrywood.
Why we carry them
We are glad to have a Bay Area neighbor making whiskey from grain to bottle. The cherrywood smoked bourbon is a standout.
