Their story
SOTO is a sake brand started by Billy Melnyk and Dan Rubinoff, who set out to introduce more Americans to real Japanese sake. The company is based in Miami, while the sake itself is brewed in Niigata, a prefecture on Japan's west coast known for crisp, clean styles.
The brand drew wider attention in 2020 when tennis champion Naomi Osaka joined as an investor and creative consultant. SOTO keeps a short lineup, built around a Junmai and a Junmai Daiginjo, packaged with a sleek, contemporary look meant to make sake feel approachable.
How it's made
SOTO's sake is produced in Niigata, Japan, in junmai styles, meaning it is made from rice, water, koji and yeast without added distilled alcohol. The brand says its sake is gluten free and made without sulfites, preservatives or added sugar. The lineup includes a Junmai at 14% ABV and a Junmai Daiginjo at 15.5% ABV.
