Their story
Daniel Barnes started Treaty Oak in 2006 in a warehouse in North Austin, one of the early craft distilleries in Texas. His first still was an open-fired rig built by his father-in-law, and the earliest spirits were made from molasses before the team moved to grain.
In 2013 Barnes bought a ranch in Dripping Springs in the Hill Country and moved the operation there. The property now holds the distillery, a rickhouse, a restaurant and a cocktail bar, and it has become a gathering spot as much as a production site.
How it's made
Treaty Oak makes bourbon, rye and several gins on copper Vendome pot stills at the ranch. Its Ghost Hill line is distilled and aged on site, while the Red Handed line blends whiskey sourced from other producers.
I saw the distillery as the perfect agricultural opportunity.
Why we carry them
We like pouring Ghost Hill for anyone curious about what Texas heat does to bourbon. It is bold and full of character.
