Their story

Graham Pirtle and Young Stowe met as roommates at a boarding school in Tennessee about two decades ago. Pirtle went on to work in fine tea, including at 29B Teahouse, while Stowe built a career in beer and wine.

In 2019 they began planning a small wine bar with its own fermentation program. That idea turned into Unified Ferments, a four-person operation in Brooklyn making non-alcoholic fermented teas. The lineup includes a Taiwanese Bao Zhong oolong, a toasted buckwheat tea from Nagano, wild Labrador tea from Quebec, and a smoky Lapsang Souchong.

How it's made

Each bottle starts with a single-origin tea, fermented with a SCOBY in steel tanks much like kombucha, with a small amount of sweetener. The fermentation is kept light and the team tastes as it goes, so the tea stays front and center instead of being masked by fruit or heavy acidity.

We use fermentation to help you taste tea in a different way.

Why we carry them

Unified Ferments is one of our favorite bottles for anyone skipping alcohol but still wanting something to sip slowly at dinner. Pour it in a wine glass and treat it like one.
