Their story
Very Olde St. Nick is the best-known label of Preservation Distillery, which spirits veteran Marci Palatella opened in 2017 on a 35-acre horse farm outside Bardstown, Kentucky. The stillhouse sits in a converted 19th-century horse barn.
The name has a longer past than the distillery. Very Olde St. Nick began as an export brand with a following in Japan, and older bottlings are still prized by collectors there. Under Preservation it has come home to American shelves, alongside sister labels such as Rare Perfection and Old Man Winter.
How it's made
Most Very Olde St. Nick releases are drawn from a small number of well-aged barrels, often 15 years or older, sourced from Kentucky and Indiana and bottled at cask strength. Preservation also distills its own bourbon and rye on site, and every bottle is filled, corked and labeled by hand under black wax.
Why we carry them
We reach for Very Olde St. Nick when someone wants a rare, older bourbon with a story behind the label. It is high proof, so add a few drops of water and take your time.
