Their story
Chuao Chocolatier was started by chef Michael Antonorsi and his brother, Richard, who are originally from Venezuela. They named the company after Chuao, a celebrated cacao-growing region of their home country. It is pronounced chew-wow.
The brothers opened in Encinitas, north of San Diego, in 2002, first making European-style bonbons and truffles. Over time bars took over, and by 2018 they made up nearly all of the business.
In 2016 Chuao moved its production and retail operations into one larger building in Carlsbad, where it still makes its chocolate.
How it's made
All of Chuao's bars use Fairtrade-certified chocolate. The chocolate is tempered, poured into bar molds and topped with inclusions, then wrapped by machine and packed by hand at the Carlsbad facility.
Maybe it's a difficult name to pronounce, but if you get to understand that, you'll never forget it
Why we carry them
We like Chuao for its fun flavor combinations built on Fairtrade chocolate. A bar makes an easy little gift or an afternoon treat.
