Their story
Raaka began in 2010 when two friends, Ryan and Nate, started making chocolate together in Brooklyn. A year later they opened their first full-time factory, and they now work out of Red Hook.
The idea that set them apart was simple: skip the roast. Raaka makes its dark chocolate from scratch without roasting the beans, aiming to keep the bright, fruity character of the cacao.
In 2018 the company launched a Transparent Trade program to pay farmers a fair, steady price and to show customers where their cacao comes from.
How it's made
Raaka buys traceable, single-origin cacao that is fermented with its pulp for several days and then sun-dried. The beans go into the chocolate unroasted, which keeps more of their natural fruit and acidity.
Why we carry them
We love handing a Raaka bar to anyone who thinks dark chocolate has to taste bitter. The flavors are bright and surprising.
