Their story
Spinnaker Chocolate is run by siblings Chris and Kelly Van Arsdale in Seattle. Chris started making chocolate at home as a hobby, Kelly joined him in 2018, and by 2019 she was working on it full time.
The pair opened their Seattle shop and factory in October 2021, which Kelly considers the true start of the business. Today Spinnaker makes single-origin bars from cacao grown in places like Belize, Tanzania and Madagascar, along with flavored bars such as oat milk and coffee varieties.
How it's made
Unlike many makers who roast whole beans, Spinnaker roasts only the cracked cacao nibs, which the team finds gives a cleaner, more distinct flavor. They monitor temperature and humidity closely and check moisture before and after roasting. From there, the bars are made in small batches using a classic craft chocolate process.
You can really taste the distinct individual flavors of the cacao.
Why we carry them
We love tasting single-origin bars side by side, and Spinnaker's lineup is a great way to do it. Try two origins at once and compare.
