Their story

K+M is a partnership between two people who care a great deal about ingredients: Thomas Keller, the chef behind The French Laundry and holder of multiple three-star Michelin ratings, and Armando Manni, an Italian olive oil producer who developed his production methods with the University of Florence.

Together they set out to rethink a chocolate bar. Their idea was to use Manni's organic extra virgin olive oil instead of cocoa butter, and they built a bean-to-bar chocolate factory in Napa Valley to make it.

The result is a line they call Extravirgin Chocolate, sold as plain bars and with inclusions.

How it's made

Cacao beans are sourced by working directly with individual farms, then roasted at low temperatures in Napa. Manni's organic extra virgin olive oil replaces the usual cocoa butter, which gives the bars a soft, silky texture.

Why we carry them

We love handing someone a square of K+M without explaining it first; the olive oil makes the texture surprisingly smooth and the fruit in the cacao really shows.
