Their story
XO Marshmallow started in Chicago with two friends: Kat Connor, who began making marshmallows in her last year of law school, and Lindzi Shanks, who had a background in clothing design and psychology.
In June 2017, after a Kickstarter campaign that funded in two weeks, they opened what they called the world's first marshmallow café. They closed the café in December 2024 to focus on online sales and wider retail. Kat Connor also wrote The XO Marshmallow Cookbook.
How it's made
Every marshmallow is made by hand in the company's Chicago kitchen. Because standard equipment is built for cylinder-shaped marshmallows, the team designed its own production setup for their large squares, which keep for about four months.
