Their story
Bespoken Spirits was started in the San Francisco Bay Area by Stu Aaron and Martin Janousek, a materials scientist, who set out to rethink how spirits pick up flavor from wood. The company drew attention for maturing spirits in a matter of days instead of years.
In 2024 Bespoken moved its headquarters and production to Lexington, Kentucky, adding its own distillery as part of the move. The project was led in part by Scott Savage, a Lexington native who heads research, development, and production.
How it's made
Instead of long barrel aging, Bespoken uses a patented maturation process that works with the same basic elements of wood, toast, and char. Small pieces of oak are matched to a spirit and controlled conditions draw out color, aroma, and flavor quickly. The company says the method uses less wood and time than traditional aging.
