Their story

Billecart-Salmon began in 1818 with the marriage of Nicolas François Billecart and Elisabeth Salmon in the village of Mareuil-sur-Aÿ. Elisabeth's brother, Louis Salmon, made the first wines.

The house is still in family hands, one of the few in Champagne that can say so. Mathieu Roland-Billecart, the seventh generation, became president in 2019. Along the way the family rebuilt after World War I, and in the 1990s pulled its bottles from supermarkets to focus on independent shops and restaurants.

In 1999 its 1959 Cuvée Nicolas François Billecart was named the top wine in a blind tasting of 150 Champagnes from the twentieth century.

How it's made

In 1958 the house adopted cold settling and a longer, cooler fermentation, borrowed from brewing, to keep the wines fresh. Small tanks let the team vinify grape varieties and parcels separately, and since 2010 more wine has been aged in small oak barrels and large foudres. The Brut Réserve rests about three years in the cellar before release.

We love Billecart-Salmon for its precision and freshness. The Brut Rosé is one of our favorite bottles to bring to a celebration.
