Their story

Bixby & Co. is the chocolate company founded by Kate McAleer in Rockland, Maine. It is based on Tillson Avenue in the old O'Hara ice plant, where visitors can stop into a tasting room and shop to learn how chocolate is made.

The company bills itself as Maine's first bean-to-bar chocolate factory. McAleer has won several pitch competitions along the way, including a prize from the Tory Burch Foundation.

How it's made

Bixby roasts cacao beans, separates the shells from the nibs in a winnower, then grinds the nibs in a melanger into chocolate liquor, the base for everything it makes. The line includes organic bars, bite-size Bixby Bars, chocolate-covered caramels, clusters, drinking chocolate and the Maine candy known as Needham's.

Why we carry them

We love finding a small chocolate maker that does every step itself. The bite-size bars are perfect for a lunchbox or a stocking.
